I have a 07 Santa Fe and its time for my 15,000 mile service. What should be done to it and what will it cost me.

There's nothing special at 15K miles. Just a oil change and tire rotation basically. 30K and 60K are the big services.

If you notice the flyer.. it's a RECOMMENDED service... not required.

If you want to keep your warranty, yes, it is REQUIRED.

Is that a old maintenance menu?? When I called the dealer they told me it was going to be $199.95 to do it.

The only things REQUIRED are what is in the service handbook from the factory, not what the dealer wants to drain from you.

If you had actually read your owners manual you would have seen that what's listed above is the same as what's listed in the owners manual.
